1/2 cup (8 tablespoons) butter, at room temperature
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
4 teaspoon vanilla extract
2 cups All-Purpose Flour
1/2 cup low fat milk
2 1/2 cups blueberries, fresh preferred
1/4 cup sugar, for topping(optional)
Instructions:
Preheat the oven to 375°F.
In a mixer, beat together the butter and sugar until it's fluffy and creamy.
Add the eggs one at a time, beat well after each addition scraping the sides of the bowl .
whisk together the flour,baking powder, salt, and vanilla.
Add the milk to the butter cream , beating gently just to combine. Scrape the bottom and sides of the bowl.
add the dry ingridients to the cream untill it's comletly combined
Mash 1/2 cup of the blueberries. to the batter, stirring just to combine and distribute.
Scoop the batter to the muffin pan; a muffin scoop works well here.
Sprinkle about 1 teaspoon granulated sugar atop each muffin, if desired.
Bake the muffins for about 30 minutes, until they're light golden brown on top, insert a toothpick in the center of the muffin if it's comes out clean then our muffins are done
Remove the muffins from the oven, loosen them from the muffin pan and enjoy the taste of these amazing muffins .
