Ingredients
1 Tablespoon Shortening
3 Tablespoons Flour
1 8−oz Tomato sauce
2 Tablespoons Chili powder
3/4 teaspoon Garlic powder
12 Corn Tortillas
1 pound Cheese grated
1 large Onion, chopped
salt
water
How to make Enchiladas:
In a pan we start by melting shortening
Add the ground meat, cook the meat untill is golden .
Add tomato sauce and 1 cup water
in a bowl make a paste by mixing 1/2 cup water with the chili powder, once is smoth add it to the meat mixture.
Add salt, garlic powder.
Cook it until it is of gravy consistency, if the chili gets too thick you could add more water
Dip tortillas one at a time in the chili
The tortillas become soft quickly wich will
make rolling the enchiladas easier, don't leave to much time in the chili sauce.
In the one side of the center of the tortilla place grated cheese, minced onion, tablespoon of the meat mixture
Roll tortilla tightly and place loose side down in a baking dish.
Pour the remaining hot chili sauce all over the enchiladas
over all, on top put the chopped, onion, grated cheese.
Bake at 350 degrees, bake it until the cheese is melted.
